“Our intention is to make the finest Olive Oil possible. This means not cutting corners, ensuring that the olives are cared for year round and that each harvest is top notch. The quality of the olive makes all the difference in every press. We want to keep the true authenticity of Italian Olive Oil heritage.”

Morning Dew Ranch – Olio Nuovo

An Italian culinary tradition that is hundreds of years old. Olio Nuovo (which means, new oil) differs from your typical Olive Oil. We release the oil 2 weeks after cold-pressing without any filtering. Our aim is to make the highest quality olive oil possible, our most recent release marks the 7th vintage of our Olive Oil.

This extra virgin cold pressed olive oil is made exclusively from olives harvested in the heart of California’s wine country, at our own Morning Dew Ranch estate property in the Anderson Valley. These mature olive trees grow on a small patch of sloped hillside adjacent to some of the Castello’s most prized Pinot Noir vines. Under the watchful eyes of both our Winemaker Brooks Painter and Vineyard Manager David Bejar. Harvests are done by hand to ensure top notch quality. The result is a deliciously soft oil ~ smooth and buttery. Cold pressed to preserve all the natural flavor possible. It is best as a finishing oil and a dipping oil; enjoy Olio Nuovo drizzled on salads, pasta, salumi and cheese, or over grilled meat or fish. Delicious simply as a dip with salt and bread.

“We wish we could sell Olio Nuovo all year, but the tiny olive particles that give the oil vibrant flavors must be filtered out so that our EVOO can be bottled and enjoyed throughout the year. We recommend storing our oils in a dark, cool location and using within 1 year of the harvest date. ” – Castello President Georg Salzner

OLIO NUOVO

“We are proud to announce the first planting of our Olive Trees surrounding the Castle in Napa Valley. Although it will take patience to develop, we think the end result will speak for itself.”

Castello di Amorosa President

Napa Valley Castello Olive Oil

With the spirit of true Tuscan Olive Oil in mind, we are proud to announce the first planting of our Olive Trees surrounding the Castle in Napa Valley. President Georg Salzner & vineyard manager David Bejar planted our first olive trees at The Castle in May of 2022. We hope these trees will bring the best olive oil in all of Napa Valley.

We strive to cultivate the same authenticity that has become synonymous with authentic Tuscan Olive Oil. We do this by using the same popular varieties used to make the most premium Olive Oil in all of Italy.

We planted 12 different varieties of Olive Trees surrounding Castello di Amorosa, these olive trees are known to make a superior olive for oil production. Many of these trees originate in Italy. We look forward to the first fully mature harvest in which we can produce our first olive oil. The olives themselves will not be ready to make olive oil for 7-10 years. But we did have another estate that is currently producing high quality Olive Oil.
