Our First Olive Oil Trees

We are proud to announce the first planting of our olive trees surrounding the Castle in Napa Valley. This marks another step forward in our ongoing sustainability efforts.

We planted 12 different varieties of olive trees, many originating from Italy and known for producing exceptional olive oil. We look forward to the day when these trees reach full maturity and yield our first harvest.

Below are some of the olive varietals now growing at the Castle:

Frantoio

A prized Tuscan olive known for producing highly aromatic, fruity oils with herbal and almond notes. Fast-growing and high-yielding, it is a cornerstone of Italian olive oil production.

Leccino

A delicate and aromatic olive often blended with other varietals. Produces a mild, slightly sweet oil and grows well in a variety of climates.

Pendolino

Known as an excellent pollinator, Pendolino olives offer balanced flavors—fruity at first with a slightly bitter and spicy finish.

Maurino

A Tuscan variety valued for its sweet, delicate oil. Often planted alongside other trees due to its need for cross-pollination.

Mission

A historic California varietal dating back to 1769. Produces mild, grassy oils and versatile olives ideal for both oil and table use.

Manzanilla

A hardy Mediterranean olive known for its crisp texture and slightly smoky, almond-like flavor. Popular for both oil and table olives.

Itrana

Produces intensely fruity oils with hints of grass and almond. Known for high-quality oil production and award-winning flavor.

Coratina

A bold Italian varietal producing robust, tangy oil with high antioxidant content and excellent stability.

Add a handful of the fresh grapes and blackberries for a burst of natural sweetness. Top with a splash of sparkling water for a crisp finish, then garnish with fresh herbs.
