In the heat of summer, a bold Cabernet may feel too heavy, while in the chill of winter, a crisp white might seem less comforting. So what do you choose when rich, creamy winter dishes call for something other than red wine?

The answer: a winter white.

Chardonnay—specifically Castello di Amorosa’s Bien Nacido Vineyard Chardonnay—offers the perfect balance. Grown along California’s Central Coast, this vineyard benefits from cool morning fog and warm afternoon sun, allowing grapes to ripen slowly while maintaining vibrant acidity.

  • ½ lb fettuccine, uncooked
  • 1 lb boneless skinless chicken breasts, cut into strips
  • 4 tsp flour
  • 1¼ cups chicken broth
  • 4 oz mascarpone (or cream cheese)
  • ½ cup grated Parmesan, divided
  • ¼ tsp garlic powder
  • ¼ tsp white pepper

Cook pasta until slightly firm. In a large skillet, sauté chicken over medium-high heat for 5–7 minutes or until cooked through. Remove and set aside. In the same pan, whisk together flour and broth. Stir in mascarpone, 2 tablespoons Parmesan, garlic powder, and pepper. Cook until the mixture thickens. Return chicken to the skillet and stir to combine. Drain pasta, add to a large bowl, and toss with the sauce. Finish with remaining Parmesan and serve warm.

Pour into a 10oz glass (or combine servings into a pitcher) : the Serata wine, orange juice, and pineapple juice. Add a handful of the fresh grapes and blackberries for a burst of natural sweetness. Let the mixture sit for at least 10 minutes so flavors can mingle. Add ice and top with a splash of sparkling water for a crisp finish, then garnish with fresh herbs. Stir gently and serve immediately. This easy sangria recipe balances citrus brightness with subtle sweetness, while the sparkling water keeps it light and refreshing.
