Fermentation Room

Explore our Fermentation room with Castello winemaker Peter Velleno. We have two fermentation rooms, one for red wine and one for white wine. This is our red wine fermentation room. Used to make some of the best red wines in Napa Valley.

Red wine tanks have no tops so that we can punch down the cap of grape skins forced to the top during fermentation by the turbulent pressure this process produces. Once the red wine has completed its fermentation cycle it is gravity fed to the cellars below here it is poured into french oak barrel. The upper deck level, allows us to punch down the cap of grape skins forced to the top during fermentation by the turbulent pressure this process produces. The upper level also helps us to observe the wine from all levels of the tank. Massive wooden doors to these rooms weigh roughly a thousands pounds each.

White wines are entirely aged in the tanks, these tanks are taller & skinnier than their red counterparts. For white wines, the fermentation process occurs at a cooler level than red wines.
